Garlic Parmesan Chicken Ingredients
- 600 g boneless skinless chicken breast, cut into bite-sized pieces
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.5 tsp black pepper
- 0.5 tsp paprika
- 0.5 tsp garlic powder
- 2 tbsp grated Parmesan cheese
- 1 tbsp chopped parsley, for garnish
Creamy Parmesan Sauce Ingredients
- 1 tbsp unsalted butter
- 2 cloves garlic, minced
- 120 ml low-fat milk
- 60 ml chicken broth
- 30 g grated Parmesan cheese
- 30 g light cream cheese
- 0.25 tsp red pepper flakes, optional
- Salt and pepper, to taste
Creamy Mashed Potatoes Ingredients
- 600 g russet potatoes, peeled and cubed
- 1 tbsp unsalted butter
- 60 ml low-fat milk
- 2 tbsp light cream cheese
- 0.5 tsp garlic powder
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
- Add the cubed potatoes to a large pot of salted boiling water. Cook for 12-15 minutes until fork-tender.
- Drain the potatoes and return them to the pot.
- Add butter, milk, cream cheese, garlic powder, salt, and pepper. Mash until smooth and creamy. Set aside.
- Season the chicken with salt, pepper, paprika, garlic powder, and Parmesan.
- Heat olive oil in a skillet over medium-high heat. Cook the chicken for 6-8 minutes until golden brown and cooked through. Remove and set aside.
- In the same pan, melt butter and saute the garlic for 30 seconds.
- Add milk, chicken broth, Parmesan cheese, and cream cheese. Stir continuously until the sauce thickens and becomes smooth.
- Add red pepper flakes if desired.
- Add the cooked chicken back into the sauce and toss to coat evenly.
- Divide the mashed potatoes and garlic parmesan chicken among 3 meal-prep containers.
- Drizzle extra sauce over the top and sprinkle with chopped parsley.
