Crispy Garlic Chicken Ingredients

  • 600 g boneless skinless chicken breast, cut into small cubes
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp unsalted butter

Fried Rice Ingredients

  • 3 cups cooked jasmine rice, chilled overnight
  • 2 eggs, beaten
  • 1 tbsp sesame oil
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 cup mixed vegetables, such as carrots, peas, corn, and green onion
  • 2 cloves garlic, minced
  • 0.5 tsp chilli flakes, optional

Spicy Mayo Drizzle Ingredients

  • 60 g light mayonnaise
  • 1 tbsp sriracha sauce
  • 0.5 tsp soy sauce
  • 1 tsp lemon juice

Garnish

  • 1 tsp sesame seeds
  • 1 tbsp chopped parsley or green onions

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Season the chicken with salt, pepper, and garlic powder.
  3. Cook for 7-8 minutes until browned and crispy.
  4. Add the minced garlic, soy sauce, honey, and butter. Toss until glazed and sticky. Remove and set aside.
  5. In the same pan, add sesame oil and garlic. Saute for 30 seconds.
  6. Add the mixed vegetables and cook for 2-3 minutes.
  7. Push the vegetables to the side and pour in the beaten eggs. Scramble until cooked through.
  8. Add the chilled rice, soy sauce, and oyster sauce. Stir-fry for 4-5 minutes until evenly coated and slightly crisp.
  9. In a small bowl, whisk together the mayonnaise, sriracha, soy sauce, and lemon juice until smooth.
  10. Divide the fried rice into 4 meal-prep containers.
  11. Top with crispy garlic chicken and drizzle with spicy mayo.
  12. Sprinkle with sesame seeds and parsley or green onions.
